Finca San Francisco, one of the larger farms managed by Jasal (a family business with over 100 years in the trade), sits on the mountain ranges of Apaneca Ilamatepec, Santa. Brothers Jose Antonio and Andres Salaverrie oversee the daily operations, which has been in their family for 6 generations.
The coffee is all hand picked on this awkward terrrain, and then transported to their processing mill, Las Cruces, each afternoon. The coffees are then meticulously sorted, making each lot traceable to unique hillsides and areas of the farm.
